Understanding the chemistry of oils and fats, as well as their extraction methods, is of fundamental importance to human beings, taking into account the great diversity of products that can be generated from them, as well as their use for pharmacological, industrial and nutritional purposes. The aim of this study was to characterize the chemical composition of the fixed oil of Azadirachta indica (Nim) seeds, in terms of its fatty acids, using different extraction processes. This characterization was determined by Gas Chromatography Coupled to Mass Spectrometry (GC-MS), through its methyl esters, obtained by the transesterification and saponification processes, separately. The study made it possible to characterize the oil from Azadirachta indica (Nim) seeds using the methodologies initially proposed. In addition, the results were logical and solid, confirming methyl octadec-9-enoate as the main product in all the chromatograms.
