After being diagnosed with coeliac disease later in life - a condition she believes she lived with undiagnosed for many years - she was inspired to bring the hidden life of dietary restrictions into the light.The character Gluten Free Freddie came to life when Caroline became a Granny for the first time, giving her a special lens through which to share a crucial message: that every child, regardless of diet, belongs at the table.
