This work characterizes Spanish wines obtained from ecological or organic cultivation, biodynamic and conventional production. This work characterizes Spanish wines obtained from ecological or organic cultivation, biodynamic and conventional production. This study was carried out at the Andalusian Wine Research Center, specifically in the area of analytical chemistry. The following parameters were analyzed: routine analyses - total acidity, pH, alcoholic degree, free sulphur dioxide and total sulphur dioxide-, metals - iron, potassium and magnesium-, polyphenols - caffeic acid, p-coumaric acid, tyrosol, quercetin-3-D-Galactoside, quercitin-3-D-beta-Glucoside, catechin, epicatechin, gallic acid and protocatechuic acid -, and infrared spectroscopy in the 950 cm-1 to 8000 cm-1 wavelength.
