Anthocyanins are a class of compounds often associated with the colouration of plant species. This group is found in various parts of the plant, such as the stem, flower, fruit, leaf, among others. In this study, the anthocyanin content of ethanol-water extracts of the flower species Allamanda laevis (yellow allamanda), Hibiscus rosa-sinensis (hibiscus), Centrosema brasilianum (wild bean), Ixora coccínea (ixora), Senna alata (mangerioba do pará), Ipomoea glabra (gitirana), Tithonia diversifolia (mini-sunflower) and Tabebuia avellanedae (purple ipê). The study also includes obtaining a list of the anthocyanin content present in each species and its capacity as an indicator of acids and bases. Initially, the extracts were evaluated in order to estimate the concentration of anthocyanins present in them. From the above, it can be seen that there is a direct relationship between the variation in colour and the anthocyanin content.
