Keith Nicholas was born in Adelaide, South Australia in the 1960s. He works as a public servant, who for the past 15 years has spent one evening a week at his local hotel. "I have been fortunate to have a local hotel that has employed several outstanding mixologists over the years. Having a reasonably good palate, they would use me as a testing opportunity for their new creations. The resulting collaboration between staff and myself in refining the cocktails was both a great learning experience and has led to some of the best cocktails coming out of Adelaide. I prefer my cocktails twisted!"
