The leaves and fruit of the guava tree are rich in antioxidant compounds, which can inhibit the oxidation of lipoproteins, reducing the effects of oxidative stress. The aim of this study was to evaluate the substances and antioxidant potential of the leaves and fruit of three guava cultivars (Paluma, Pedro Sato and Século XXI), as well as to assess the effect of the Pedro Sato cultivar on the control of hypercholesterolemia and oxidative stress in rats. Moisture, mineral content, dietary fiber, vitamin C, beta-carotene, phenolic compounds and antioxidant activity were analyzed using the DPPH and beta-carotene/linoleic acid methods. Hypercholesterolemic rats were treated with the extracts and flours and had their blood and liver analyzed: liver mass versus body mass ratio, hepatic lipids, total cholesterol, HDL cholesterol, non-HDL cholesterol, triglycerides, C-reactive protein, activity of the antioxidant enzymes superoxide dismutase and glutathione peroxidase) and the lipoperoxidation marker (malonic dialdehyde). Histopathological analysis was carried out on the liver to assess the hepatocytes.
