This book explores an innovative and sustainable approach to extracting active ingredients from medicinal plants, highlighting the remarkable effectiveness of the Pulsed Electric Field (PEF) as a green extraction technique applied to a medicinal plant of major interest: Eucalyptus globulus, a plant with well-known antioxidant therapeutic virtues, in order to optimize the extraction of phenolic compounds. Thanks to the precise adjustment of electrical parameters, the CEP method doubled the concentration of phenolic compounds and increased flavonoid concentration twenty-fold in less than seven minutes, compared with conventional maceration. These results underline the outstanding potential of CEP as a green, fast and efficient technology.
