The physical-chemical and microbiological characterisation of pollen is important in the pursuit of quality control and even in the standardisation of native bee pollen. Due to the importance and lack of data relating to the study of Melipona scutellaris L. pollen In order to verify the physical-chemical, mineral and microbiological composition of pollen samples collected by Melipona scutellaris L. bees, the material was collected in the Atlantic Forest biome, where the climate is tropical humid and the annual temperature ranges from 23 to 35°C. At the same time, we propose to select the most accessible and effective technique for dehydrating and preserving pollen from Melipona scutellaris L. (Uruçu) and whose results contribute to the establishment of Identity and Quality Standards (PIQ), as well as to technical and scientific development related to conservation processes in order to promote food security in the context of family farming, especially in the activity of stingless bee breeding.
