In Angola, dairy products play a prominent role in people's eating habits. The aim of this study was to characterize the physical and chemical indicators of dairy products produced in Angola's industrial sector. It was carried out between February 2013 and October 2015. The process of making the products was monitored and the physicochemical parameters such as pH, acidity, energy, humidity, fat, protein and ash of yogurt, cheese and butter were determined.

Justina Chimuco, de nationalité angolaise, est titulaire d'une maîtrise en production et technologie alimentaires de l'université José Eduardo dos Santo et d'un diplôme en médecine vétérinaire de l'université Agostinho Neto. Elle est actuellement professeur adjoint et enseigne la pharmacologie et la toxicologie à la faculté de médecine vétérinaire de Huambo, en Angola.
