Mariana Gardin Alves est nutritionniste et titulaire d'une maîtrise en sciences de l'environnement. Elle est professeur à l'université de Taubaté et au Centre Paula Souza. Mariko Ueno est ingénieur alimentaire et titulaire d'un doctorat en microbiologie alimentaire. Professeur à l'université de Taubaté, elle travaille sur le programme de troisième cycle en sciences de l'environnement.
