Organic farming is a model that is still relatively unexplored in Brazil, but it is gaining ground in the debate, given society's growing awareness of the various dimensions of consumption. This new paradigm of concern about the impacts of consumption is not predominant, but it is a strong trend in the world that is also growing in Brazil. The model is more suitable for small producers and is relevant in terms of food security policy and the reactivation of local economies. In addition to the social aspect, it is important to highlight the issue of environmental sustainability intrinsic to the system, which causes less soil, water and air pollution than the conventional model. This study aims to provide an overview of the national and international organic market, seeking to identify measures that can help increase productivity and technology in the segment, in order to reduce the gap between supply and demand, with a consequent drop in prices in this market.
