Routledge Studies in Food, Society and the Environment
Tiana Baki¿ Hayden is an Anthropologist and a Professor of Urban Studies at El Colegio de México, Mexico. Her research focuses on cultures of food commerce and consumption and on the relationship between food and mobilities. Joaquín Pérez Martín is a Professor and Researcher of agrifood systems at Universidad de Buenos Aires, Argentina. His research focuses on urban food supply, food infrastructure, logistics, governance, and policies.
