Raymond Tan is a self-taught Melbourne-based baker who gained global recognition for his unique inventive bakes that draws inspiration from Southeast Asian flavors. Raymond – who never turned on an oven before moving from Selangor, Malaysia to Australia in 2006 – caught the attention of Vogue and MoMA with his viral decorated cake pops and fortune cookies. In 2019, he founded Raya Bakery, known for chunky cookies and layer cakes, in the heart of Melbourne. He co-owns bingsu and matcha dessert cafe Nimbo, and will open "Scandinasian" bakery Dua in early 2025. His cake artistry blends cultural heritage with a modern twist. He was an early Instagram adopter and has 221k followers, with supporters around the world and an enviable media clippings folder, with press in Vogue, Cosmopolitan, Buzzfeed and CNN. Audrey Payne is a contributing editor to Cherry Bombe, a Brooklyn-based indie media company celebrating women and cool creatives in the world of food and drink, and the Melbourne food and drink editor for Broadsheet, Australia's number one cultural guide. Audrey learned to bake by watching The Martha Stewart Show after school as a pre-teen. She was raised in Melbourne to a Caucasian father and a Chinese Malaysian mother (who wishes Raymond Tan was her own son). Audrey studied finance at New York University, but quickly realised food media people are much more fun.
